Celery (Apium graveolens) is a annual or bi-annual, herbaceous plant in the Parsley family (Apiaceae), commonly used as a vegetable (in particular Celery root / bulbs are popular for use in salads and soups, e.g. Minestrone).
The plant grows to 1 meter (3ft) tall. The leaves are pinnate to bipinnate with rhombic leaflets 3–6 cm (1-2in) long and 2–4 cm (0.75-1.5in) broad. The flowers are creamy-white, 2–3 mm (0.1in) in diameter, and are produced in dense compound umbels. The seeds are broad ovoid to globose, 1.5–2 mm (0.05in) long and wide.
Celery has diuretic, digestive, diaphoretic (promoting perspiration) and blood cleansing properties; it contains bio-active ingredients like iron, calcium, magnesium and phosphorus.
The use of Celery helps with many rheumatoid disorders, as a result of a increased release of uric acid. Celery also has aphrodisiac properties (it used to be called European Ginseng). It is recommended to combine Celery with other herbs with stimulating properties, e.g. Kola Nut (Cola nitida), Savory (Satureja montana) or Siberian Ginseng (Eleutherococcus senticosus).
